Process all ingredients (except almonds) into a smooth shortcrust pastry, wrap in foil and refrigerate (preferably overnight in the refrigerator).
Roll out the dough and cut out cookies. (Note: the original spice cookies from my aunt Klara were always in the shape of flowers!)
Place the cookies on a baking sheet lined with baking paper, place half almonds in the center of the cookies and brush with egg yolk. Bake at 180 ° C (fan oven) for about 15 minutes.
Immediately remove the finished spice biscuits from the tray and allow to cool.
