Australian Meat Strudel Instructions

  1. Cut the white bread into cubes, removing the crusts.
  2. Soak the bread cubes in cold water for 10-15 minutes.
  3. Drain and squeeze the bread until dry.
  4. Peel and finely chop the onions.
  5. Peel and finely chop the garlic clove.
  6. Heat the vegetable oil in a frying pan over medium heat.
  7. Add the onions and garlic to the pan and cook for 5-7 minutes, stirring occasionally, until softened and fragrant.
  8. In a large bowl, combine the minced meat, squeezed bread, cooked onion-garlic mixture, egg, mustard, salt, soda, and black pepper. Mix until just combined. Cover and refrigerate until ready to assemble.
  9. Preheat the oven to 180°C (356°F).
  10. Place parchment paper on a work surface and lay out the puff pastry.
  11. Roll the pastry to a thickness of 3 mm.
  12. Shape the meat mixture into a log and place it in the center of the pastry.
  13. Fold the long edges of the pastry up and over the meat filling, pressing to seal.
  14. Optionally, brush the top and edges with beaten egg for a golden finish.
  15. Using a fork, pierce the strudel in several places to allow steam to escape.
  16. Transfer the strudel to a baking sheet and bake at 180°C (356°F) for 30 minutes until the pastry is golden and crispy. If using a meat thermometer, ensure the filling reaches 74°C (165°F) internally.
  17. Remove from the oven and let rest for 5 minutes before serving.
