Instructions

  1. Quarter, core and dice the pumpkin. Cut the sausages into thin slices. Peel and dice onions, carrots and potatoes.
  2. Fry the sausage slices with the onions. Add the pumpkin, carrots and potatoes, fry briefly and add a little water (approx. 100 ml). Bring to the boil and cook on a low temperature for about 20-25 minutes. Add a little more water if necessary.
  3. In the meantime, cut off the ends of the zucchini, quarter and core and cut into thin slices. Quarter and core the peppers and cut into fine strips. Dice the tomatoes. Add zucchini, peppers and tomatoes to the stew and cook for another 5 minutes. Season to taste with salt and pepper. Cut the spring onions into rings and sprinkle over the stew.
