Wash and clean the vegetables and apples. Quarter the zucchini lengthways and cut into small pieces. Cut the carrots into slices. Peel the apples and cut into small cubes. Chop the onions and garlic into small pieces. Cut the spring onions into small slices.
Heat the oil in a high pan, then sauté the onions first and a little later the garlic. Then put the carrots in the pan and steam them briefly. Put the curry in the pan and fry it briefly and deglaze with about 200 ml of water. Let everything simmer for about 5 minutes. Then put the zucchini in the pan and then the apples. Let simmer again. Dissolve the sour cream in the vegetables and season. Possibly add a little more water.
Now add the spring onions to the vegetables and simmer for another 10 minutes.
