Finely grate the carrot and zucchini. Peel the apple and pear and cut into small cubes. Simmer with the cloves, vanilla pod, cinnamon, orange sugar and 2 tablespoon water for about 15 minutes over medium heat with the lid closed, until the mixture is creamy. Set aside and let cool. Remove the cloves and vanilla pod.
Whip the cream until stiff and mix with the quark. Sweeten with syrup or honey as desired. Layer the quark and compote alternately in dessert glasses.
