Meanwhile, cut the avocado, remove the core and peel and chop 2 cloves of garlic. Put the avocado and garlic in a bowl, season with salt and pepper and add the lemon juice. Puree into a thick mass with the hand blender.
Then dice the onions, bacon and the remaining garlic.
The gnocchi should be ready by then. Sieve and save a cup of the cooking water.
Heat the olive oil and a little butter in a pan. Fry the onions until they are lightly translucent. Then add the bacon and garlic. Let everything sizzle a little and then add the gnocchi. Let it sizzle again and add the avocado mixture. Turn the stove down a little.
Add the beaker of cream and stir well. Then add some of the cooking water to make it more liquid and creamy. You can use more or less according to taste - or not at all. Season to taste with salt, pepper, (chilli) salt and crème fraîche.
If you want, you can serve the gnocchi with grated cheese or simply garnish with a few fresh basil leaves.
Tip:
You can also leave out the bacon. Of course, it also tastes great with other pasta.
