1. Fry the bacon in a pan until crispy. Drain on kitchen paper. Dice the onion very finely. Drain the corn in the sieve. Squeeze the lemon with 1 - 3 teaspoons of Tabasco, mix salt, pepper, sugar and 4 tablespoons of oil. Mix in the corn and onions.
2. Halve the avocados, peel, remove the core and dice the avocado halves. Pluck the coriander leaves and carefully fold them into the salad together with the avocado cubes. Serve with the bacon.
