Instructions

  1. For the vinaigrette, whisk together lemon juice, salt, pepper, stock and honey. Beat in the oil drop by drop. Peel the onion, cut into fine cubes and stir into the vinaigrette.
  2. Peel the kohlrabi and avocado and cut into fine cubes. Roughly chop the pine nuts.
  3. Mix the vinaigrette with the kohlrabi, pine nuts and avocado. Place on 2 plates with a cup or a dressing ring and surround with cress. Place the uncut chives decoratively on the tartare.
