Instructions

  1. Reduce the orange juice in half. Mix the concentrate with salt, pepper, red chilli pepper, olive oil and honey to form a vinaigrette.
  2. Drizzle the lime juice over the avocado cubes, season with salt and pepper.
  3. To serve, place a higher metal ring on each plate and fill in a layer of avocado. Put the mozzarella on top, then the mango. Press the whole thing firmly with a spoon and drizzle with some orange vinaigrette. Pull off the ring.
  4. Mix the rocket with the rest of the vinaigrette in a bowl and place a few rocket leaves on each tower. Distribute the rest around it. Serve immediately sprinkled with pine nuts.
  5. We eat this as a main course, as a starter it is enough for 4 people.
