Instructions

  1. Peel and stone the avocados and mash them with a fork. Peel and grate the carrots. Add most of it to the avocados along with onions and garlic. Add lemon juice, paprika powder and a little salt.
  2. Shape the mixture into small balls. Roll these in the remaining carrots, arrange each on a large leaf of lettuce and serve.
