Instructions

  1. Wash the tomatoes and spring onions and cut into small pieces. Peel the avocado, remove the core and mash it in a bowl with a fork. Add the chopped tomatoes and spring onions and add 2 tablespoons of lemon juice. Season the guacamole with the spices and the grated lemon zest to taste.
  2. Now coat the slice of wholemeal bread with a layer of guacamole and cover with a thin slice of turkey breast fillet. Finally, garnish the bread with a fried egg and paprika powder and season with salt and pepper.
