Instructions

  1. Preheat the oven to 230 ° C circulating air.
  2. Halve the avocados, remove the core and cut into strips, cut about eighths. Put the flour in a bowl and turn the avocados in it. Then whisk the eggs in a bowl with a dash of mineral water and a little salt and turn the avocados in it again. In a third bowl, mix the breadcrumbs with the chilli and garlic powder as well as salt and pepper and bread the avocados in it. If you want a lot of crispies, you can also double breadcrumbs, but then you need more breadcrumbs and possibly more eggs, depending on how much water you use.
  3. Now melt the butter in a small pan or in a small saucepan.
  4. Line the avocados on a baking sheet with parchment paper and brush with the melted butter. I always use a silicone brush for this, but you can also put the butter in a spray bottle and spray the avocados like that. Then put the avocados in the oven for 13-15 minutes.
  5. In the meantime, prepare the dip. Simply mix crème fraîche, mayonnaise, yoghurt, lime juice, if you like, also zest, salt, pepper and garlic powder. Then chop the coriander and add it. If you don`t like the taste of coriander, you can just use parsley or leave out the herbs entirely.
  6. When the avocados are ready, they can be served.
