Wash the carrots and peel them with the peeler. Then cut into carrot spaghetti with a spiral cutter. Arrange the carrot spaghetti in a bowl like a nest.
Peel the avocado, remove the core and dice. Place the avcado cubes in the carrot nest and drizzle with the lemon juice. Peel the onion, cut into strips and spread over the nest. Finely chop herbs, e.g. fresh basil, and spread over them.
Mix a dressing from honey, balsamic vinegar, vinegar and olive oil. Season the nest with salt and pepper, then spread the dressing over it.
