Peel and core the avocado and mango and cut the meat into cubes. Mix with the prawns in a bowl and drizzle with the juice of half a lime. Halve the pomegranate and beat out the seeds over the bowl with a spoon. Cut the peppermint leaves very finely and mix with the salad.
For the dressing, cut the passion fruit in half and use a small spoon to put the juice and seeds in a sieve. Squeeze out the juice with a spoon. Mix with the two types of oil, the finely chopped chilli pepper, pepper and salt and season with a little sugar.
Mix the dressing with the salad and serve the salad.
