Instructions

  1. Wash the celery stalks, remove the threads and cut into fine slices. Peel and halve the papaya and remove the seeds. Cut the papaya halves crosswise into thin slices.
  2. Peel and halve the avocados. Remove the stones. Cut the avocado halves into thin wedges. Immediately drizzle with lemon juice. Lightly toast the walnuts in a pan without fat.
  3. Peel the shallot and dice it very small. Mix the shallot cubes, honey and vinegar with the olive oil and walnut oil to a creamy sauce. Season with salt and pepper.
  4. Mix the salad with celery slices and some dressing and place on a plate. Spread the papaya slices and avocado wedges on top. Drizzle with the rest of the dressing. Scatter the walnuts on top.
