Clean and wash the bell pepper, spring onions and coriander leaves. Then cut into small pieces and put in a bowl. Then halve the avocado lengthways and remove the core. Scrape out the pulp with a large spoon and add to the bowl. Then stir everything into a smooth cream with a hand blender. Finally add the sour cream and season with salt and pepper.
Now you can distribute the cream on prepared slices of bread or serve it pure as a dip.
Tip: You can refine this cream with a little garlic.
