- Divide the avocados, remove the stones and peel. Cut 1 1/2 avocados into pieces and drizzle the remaining half of the fruit with lemon juice.
- Puree the avocado pieces, chicken stock and crème frâiche. Reheat the soup and add the sherry. Do not let it boil, season with salt and pepper.
- Cut the remaining avocado into small cubes, add to the soup and serve.
- Serve with white bread, the soup can also be eaten cold.
