Cut the surimi and avocado into small pieces, press the garlic, finely chop the parsley, grate the lemon peel and squeeze the lemon, add oil, salt and pepper and mix everything well. Add a pinch of sugar (or sweetener) to taste. Cover and place in the refrigerator overnight. Then taste again if possible. Drain the oil before serving.
Very tasty as a starter with a warm baguette or flatbread.
