In a bowl with a whisk, whisk the vinegar with salt, pepper, honey, Tabasco and olive oil vigorously. Halve the avocado, remove the stone and peel. Then cut into wedges and mix immediately with the vinaigrette so that it doesn`t turn brown, leave to marinate in the refrigerator for 5-10 minutes.
In the meantime, wash the rocket and remove the hard stalks if necessary. Spread the rocket on plates as a bed and serve the avocado with the vinaigrette and the sliced ham on top.
