- Fry the fillets vigorously all around in hot oil, cook over medium heat for approx. 12 - 15 minutes.
- Remove the fillets from the pan, season with salt and pepper, set aside.
- Wash the lettuce and pluck it into bite-sized pieces. Clean the tomatoes, cut in half. Drain the mini mozzarella, if you like, chop it roughly.
- Wash the chives and cut into small rolls. Put something aside for garnish. Clean the chervil and pluck the leaves from the stems.
- Quarter and core the melon, peel the quarters and cut into wedges.
- Mix the vinegar, salt, pepper, sugar, chives and oil together.
- Mix the lettuce, melon, mozzarella, tomatoes and chervil, arrange on 4 salad plates, pour the salad sauce over them.
- Cut the chicken breast fillets into attractive slices and add to the salad.
- Garnish the salad with chives and serve.
