Instructions

  1. Place the meat, the rind and the dry lentils in a large saucepan with cold water, bring to the boil and simmer for about 45 minutes. Peel and dice the potatoes. Clean, peel and dice the soup vegetables. Peel and slice the onions. Cut the sausage into rings.
  2. Fry the sausage and onions brown in a pan, but do not let them get too dark. When the meat is done, remove it and chop or dice. Serve the rind whole or cut into small pieces in the soup.
  3. Put the potatoes and the soup vegetables in the stock with the lentils, add the stock and simmer for about 30 minutes. Then add the meat and the sausage and onion mixture to the soup. Season to taste with salt, pepper, sugar and vinegar.
  4. It is served with rolls or farmhouse bread.
