Wash and dry the spinach leaves. Leaves that are as tender and young as possible are particularly suitable for this delicious salad. As an alternative to young spinach, you can also use lamb`s lettuce or rocket.
Halve the shallot (or red onion) and cut into fine rings. Cut the bacon into cubes and fry in a pan.
For the dressing, mix the oil with the vinegar, a little mustard, jam and a pressed garlic clove in a ratio of 3: 2. Season to taste with a little salt and pepper. If the fruit vinegar is too sour, add a little honey or maple syrup to the dressing. Personally, I like sour dressings, but that`s a matter of taste, it should taste slightly sweet and fruity!
Mix well and pour over the salad. Then add the bacon and onion and crumble the feta cheese over it. Serve with fresh baguette or farmhouse bread. A great salad - either as a starter or main course!
