Mix both types of flour in a bowl, make a well in the middle. Crumble the yeast in 50 ml of lukewarm water and dissolve in it. Pour the yeast water into the well and sprinkle some flour over it from the edge. Cover and let the dough rise for 5 minutes.
In the meantime, melt the butter in a small saucepan and let cool down a little. Add 300 ml of lukewarm water and the almond or cashew butter to the pre-dough in the bowl. Knead everything into a smooth dough in about 10 minutes. Cover and let the yeast dough rise in a warm place for about 1 hour.
Preheat the oven to 200 top / bottom heat.
Grease the loaf pan, add the dough, smooth it out and let it rise for 10 minutes. Brush with water. Bake in the preheated oven for about 25 minutes on the middle rack. Remove from the tin and leave to cool on a wire rack.
This recipe is wonderfully suitable for business administration and also tastes good for adults. Makes about 15 slices. Can also be frozen in slices, for example.
