Lay 6-8 bacon strips side by side on a work surface. Weave 6-8 more bacon strips across them to create a tight bacon net.
Spread the minced meat evenly onto the bacon net. Cut the onions into rings and arrange on top, pressing gently. Sprinkle the grated Gouda cheese over the onions. Roll the bacon net with filling into a tight cylinder.
Place an aluminum dish upside down on the grill. Set the bacon bomb on top. Grill indirectly for 30-40 minutes until the internal temperature reaches 71°C (160°F). Brush BBQ sauce onto the bacon bomb after cooking.
