Bacon – Leek – Cheese Spaetzle
Instructions
- Mix flour, eggs, milk, oil and 1 teaspoon salt in a bowl and whisk until smooth and thick.
- Bring salted water to a boil in a large pot (100°C / 212°F).
- Using a dumpling sieve or strainer with small holes, gradually push the dough into the boiling water.
- Stir with a wooden spoon for 1 minute to prevent lumps.
- Let simmer for 2 more minutes until the spaetzle are cooked through.
- Drain the spaetzle and rinse with cold water.
- Heat butter in a large pan over medium-high heat.
- Add bacon cubes and fry for 5-7 minutes until crispy.
- Add the sliced leek and fry for 2-3 minutes until softened.
- Add the cooked spaetzle and pour the sour cream over it.
- Heat through for 1-2 minutes and mix everything well.
- Season with salt, pepper and nutmeg to taste.
- Stir in the cheese and serve immediately.
