Cut the bacon into small cubes and roast in a very hot pan. Drain the lentils and rinse well with water. When the bacon is crispy, add the lentils and pour the water over them so that everything is covered. Season with salt, pepper and the bay leaves. Season with a dash of vinegar. Let the bacon lentils simmer gently for about 15 minutes. Possibly Thicken with 1 tablespoon flour (usually not necessary because of reducing).
Remove the bay leaves before serving. There are also bread dumplings.
