Boil the potatoes in salted water for about 20 minutes. In the meantime, finely dice the bacon, onions and pickles. Cut the spring onions into thin rings. Fry the bacon until crispy. Rinse the cooked potatoes with cold water, then peel and cut into slices.
Bring the water to a boil and place in a bowl. Mix with salt, pepper, sugar, vinegar and oil to form a marinade. Then add the potato slices and the fried bacon and mix carefully. Let it steep and garnish with the spring onions just before serving.
