Preheat the oven to 225 °, gas stove on setting 4.
Brush the bread on one side with butter or margarine, sprinkle with the Gouda cheese, place on the baking sheet, slide into the top rail of the oven and bake for about 10 minutes until the cheese has melted.
In the meantime, heat the remaining fat and fry the fried eggs. Fry the bacon or bacon separately in a dry pan without fat until crispy.
Take the bread out of the oven, arrange on preheated plates and top each with a fried egg and 2 slices of bacon or bacon. Garnish with a little parsley.
Certainly also tastes good with white or toast bread, but with brown bread it is a little heartier and more filling.
