Wash the potatoes, peel them, cut them into slices and cook them in salted water. In the meantime, peel the onions and cut them into slices.
Dice the Nürnberger, then fry in oil with the onions in a large pan. Add the boiled potatoes and fry for 10 minutes over medium heat without turning them, so that there is a nice crust. Then turn and fry for another 5 - 10 minutes.
The fried eggs are then fried in a second pan. These are served with the potatoes on the plate. Instead of Nuremberg meat, you can also roast meat cheese, bacon or ham.
