Divide the cauliflower into small florets and cook them in salted water for 5-10 minutes.
Preheat the oven to 200 degrees. Dice the shallot and fry in a little butter. Add the cream. Cut the camembert into slices and add to the cream mixture. Stir constantly over medium heat until cheese has melted. If you don`t like pieces in the sauce, you can peel the cheese or puree the sauce before processing. Season the cheese sauce with salt, pepper and nutmeg.
Put the cauliflower in a baking dish. Pour the cheese sauce over them and bake for about 10 minutes until a golden brown crust has formed.
