Fry the bacon in an ovenproof pan until crispy brown. Remove from heat and place the cheese slices in the pan.
Whisk the crème fraîche, egg yolk and mineral water, season with salt, paprika and nutmeg. Spread half of the mixture on the cheese.
Beat the eggs and let them slide carefully into the pan. Spread the rest of the crème fraîche mixture over the egg white and sprinkle with the grated cheese.
Bake in the preheated oven (200 degrees / gas: level 3) for about 15 minutes until the eggs are set.
Wash the chives, pat dry and cut into fine rolls. Sprinkle the eggs with it and serve in the pan.
