Instructions

  1. Preheat the oven to 200 ° C top / bottom heat.
  2. Wash the schnitzel and pat dry well. Roast 4 teaspoons of chia seeds in a pan without fat for about 1 minute. Drain the mozzarella well and cut into 6 slices.
  3. Cut the basil and possibly the garlic into strips and the garlic into small pieces. Briefly blanch the spinach in a pan with a little water and drain. Cut the tomato into 4 slices.
  4. Fry the schnitzel in a pan with the oil. Only after frying, season with salt and pepper and place in a baking dish. Spread 1 teaspoon of ajvar on each of the schnitzel, distribute the chia seeds evenly and top with the spinach. Pour the garlic on top, the tomato slices and finally the mozzarella slices on top.
  5. Baked in a hot oven for about 10 minutes. Remove from the oven and pour the basil and remaining chia seeds on top.
  6. We also had salad as a low carb meal. Of course, rice or potatoes also go well with it. As a variant, replace the spinach with mushrooms and possibly omit ajvar.
