Rinse the chops in cold water. Pat dry with kitchen paper, then season with salt and pepper (use the salt sparingly, as the cheese is usually quite salty).
Heat the clarified butter in a large pan. Add the chops and fry them brown on both sides. Take out and place side by side in an appropriately sized ovenproof dish. Finely grate the cheese and distribute it on the chops. Dust evenly with the paprika powder and cover with small flakes of butter.
Bake in a hot oven at 200 ° C for about 10 minutes until the cheese melts and is lightly browned.
