Instructions

  1. Clean the peppers and cut lengthways into strips 1 - 2 cm wide. Halve the onion and cut into strips, chop the parsley. Cut the halibut into steaks (approx. 2 - 3 cm pieces). Preheat the oven to 200 ° C.
  2. Heat 2 tablespoons of oil in a large non-stick pan over medium temperature, add peppers and onions and sauté for 10 minutes. Add vinegar, Provence herbs and olives and sauté for another 15 minutes. Season with salt and pepper and stir in 3 tablespoons of parsley.
  3. Spread the whole thing on the bottom of a baking pan the size of the fish. Brush the fish with the remaining oil, season with salt and pepper and then place on the vegetables. Bake everything together for about 20 minutes. Garnish with parsley and lemon and serve immediately.
