Cook the Fleckerl noodles (approx. 2 cm x 1 cm egg noodles - available everywhere in Austria) in salted water according to the instructions on the packet.
In the meantime, cut the smoked meat into small pieces.
Separate the eggs. Mix the sour cream with the egg yolks and season with salt, pepper and nutmeg. Beat the egg whites into firm snow.
Strain the cooked stains, stir the smoked meat and the sour cream-egg mixture, fold in the egg whites. Pour into a buttered casserole dish (about 8 to 10 cm high), sprinkle with the grated cheese and put flakes of butter on top.
Bake in the preheated oven at 180 ° C - 200 ° C for about 45 minutes until golden brown.
