Mackerel with oranges, baked on a vegetable pillow, turns out to be delicious, juicy, and very delicious. This fish dish looks very appetizing! Orange slices give interesting bright notes and very well set off the taste of the fish. Vegetables perfectly complement everything and serve as an excellent side dish. Cut off the head and fins of the mackerel, remove the insides, wash the carcass.
Sprinkle the fish inside and outside with salt, coriander, and nutmeg. Leave the carcass for 20-30 minutes.
Peel the onions and carrots. Cut the onion into half rings, rub the carrots on a coarse grater.
Heat vegetable oil in a frying pan. Fry the onions and carrots over medium heat for about 7 minutes, until soft.
At the end of cooking, add salt and sugar to taste to the pan with onions and carrots.
Mix everything and remove the pan from the heat.
Cut the orange together with the peel into thin semicircles 0.6-0.7 cm thick. You will need 4 semicircles.
Cut the fish into 5 pieces of equal width.
Grease each piece with mustard on both sides.
We turn on the oven to heat up to 180 degrees. On the bottom of any shape or baking sheet, lay out the foil, lifting it on the sides to make the sides. Put the fried onions with carrots in an even layer on the foil, level with a spoon.
Put the cut mackerel on top of the vegetables.
Insert an orange slice between the fish pieces.
Raise the sides of the foil a little more so that the juice does not flow out. You do not need to completely cover the mackerel with foil.
We put the mackerel with oranges in the oven, preheated to 180 degrees, and bake for 30-35 minutes.
