Instructions

  1. Wash the mini aubergines, remove the stem and cut the aubergines in half. Wash the cherry tomatoes and cut in half.
  2. Put both in a baking dish lightly brushed with oil. Spread the sprigs of thyme between the vegetables. Finely slice or chop the garlic and spread over the vegetables. Season everything with pepper and salt and finally drizzle with olive oil. Bake in the preheated oven at 180 degrees on the middle rack for about 20 minutes.
  3. Serve sprinkled with parmesan if you like.
