Preheat the oven to 200 degrees top / bottom heat. Grease a small baking dish a little.
Halve the nectarine, remove the stone and place the halves in the mold with the cut side up. Scatter the brown sugar over the nectarine halves. Bake the nectarine in the oven for 20-25 minutes, the cooking time may vary.
Pour boiling water over the almonds. After a few minutes, pour off the water, peel and roughly chop the almonds.
Mix the vanilla yogurt with the vanilla sugar and pour into a dessert bowl. Let the baked nectarine cool down a bit, place on the yoghurt and sprinkle with the almonds. Garnish with a mint leaf and serve.
