Instructions

  1. Cut 2/3 of the banana into thin slices. Process the rest of the banana into a pulp and mix it with the egg white (if you don`t have any use for the egg yolk, you can of course use that too). Then stir in the liquid (I always use half the milk, half the water) and the maple syrup. When everything is mixed in, stir in the oatmeal, baking powder, salt and ground almonds.
  2. Grease a small baking pan (approx. 10x20cm), lay out half of the banana slices and pour the porridge over it. Spread the rest of the banana slices and the chopped almonds on the mixture, sprinkle with a little sugar and bake in the preheated oven at 190 ° C top / bottom heat for 25 minutes.
  3. It is a super tasty alternative to daily porridge and is guaranteed to fill you up. If you don`t have time for it in the morning, you can also make a larger portion and freeze it. The banana slices turn brown, which only makes the whole thing more ripe / sweeter. If you don`t like that, you unfortunately have to invest the time in the morning, which works well for me on the weekend.
