Cut the pork fillet into approx. 2 cm thick slices. Roughly dice the tomatoes and bacon. Cut off the stalks from the rocket, wash and dry.
Heat the olive oil in a non-stick pan, season with salt and pepper on each side of the pork tenderloin. Sear the pork tenderloin in the olive oil. Add the bacon. Either remove the pork tenderloin or place it on the side of the pan. Fry the bacon in the center of the pan until crispy.
Add tomatoes and sauté briefly, add rocket and mix.
Put the whole thing in a baking dish and cover with sliced mozzarella.
Place in the preheated oven for approx. 20 minutes at approx. 200 degrees.
