Instructions

  1. Wash the potato. Wrap each potato in a lightly oiled piece of aluminum foil and cook in a hot oven at 200 ° C for about 45 minutes.
  2. Wash the spinach, let it collapse in a little boiling salted water, drain, rinse, squeeze out and chop. Peel and chop the onion. Sauté together with the spinach in 1 tablespoon butter. Dust with flour, pour in the whipped cream and simmer a little. Halve the bacon slices and fry them in 1 tablespoon butter in a small pan until crispy, remove.
  3. Pour the remaining butter into the pan, crack open the eggs, add and cover and let set over medium to low heat.
