Cut the red cabbage into four approx. 3 cm thick slices and place on a baking sheet lined with baking paper. Salt and pepper and drizzle with lemon juice and olive oil. Bake the red cabbage slices in a preheated oven at 160 ° C top / bottom heat for about 25 minutes.
In the meantime, roast the bacon cubes in a pan and then drain them on kitchen paper so that they stay crispy. Wash the thyme, shake dry and peel off the leaves.
Then take the red cabbage briefly out of the oven and crumble the feta over it. Sprinkle both with the thyme leaves, then drizzle with honey and place in the oven again for about 10 minutes. The feta should be lightly caramelized and take on a golden brown color.
Serve the gratinated red cabbage slices with a little pesto, the bacon cubes and, if necessary, some pomegranate seeds.
