Instructions

  1. Preheat the oven to 200 ° C top / bottom heat.
  2. Halve and core the avocado. Remove approx. 2 tablespoons of pulp from each half. Drizzle the cut surfaces with lemon juice.
  3. Place the avocado halves in a baking dish, season with salt and pepper. Line the hollows with 1 slice of salmon each and gently press it down. Open 1 egg at a time and slide into the avocado half. Bake in the oven for about 20 minutes until the egg white is firm, but the yolk is still a bit soft.
  4. In the meantime, peel and slice the onion. (1 red onion can also be used to taste). Finely chop the parsley and mix with the onion.
  5. Before serving, sprinkle the avocado again with coarsely ground pepper and spread the onion and parsley mixture on top.
