Preheat the oven to 200 degrees. Line a baking sheet with parchment paper.
Wash and peel the sweet potatoes and cut into approx. 1.5 cm thick slices. Brush with oil on both sides, season with salt and place on the baking sheet. After 15 minutes of cooking, turn the sweet potato slices on the middle rack. After another 10 minutes, spread the cheddar on top and bake for about 3 minutes until the cheese has melted.
In the meantime, leave the bacon in a pan. Add the shallots and, if necessary, some oil and fry until crispy. Add the garlic and sauté briefly. Season the mixture with pepper, spread it on the sweet potatoes and serve garnished with the chopped parsley.
