Instructions

  1. The first thing you should do is make the sauce!
  2. You can do it hours in advance or for a day (please only keep it in the refrigerator and heat it up slowly).
  3. In addition, the sauce tastes best after a full day.
  4. SPONGEBRIA:
  5. Clean, not wash, fresh mushrooms.
  6. Soak dried mushrooms (also usable) one night and then wash.
  7. Mushrooms, whether dried, fresh or glass, cut into pea-sized pieces, rather smaller pieces. Do not use a mixer - risk of pulp!
  8. Put in a saucepan and cover with water on the stove.
  9. Do not use broths!
  10. Add salt and caraway seeds as well as finely chopped onions to the pot.
  11. Let everything cook for 30 minutes with fresh and dried mushrooms.
  12. The cooking time for ONLY mushrooms is 10 minutes.
  13. For fresh mushrooms and mushrooms mixed from the jar, first add the fresh mushrooms for 20 minutes and then the glass mushrooms and cook for another 10 minutes.
  14. Bacon sweat and mushrooms should be ready together as the hot sweat must be in the simmering sauce. To do this, dice the bacon and leave it out, add the flour, slowly add the sweat to the sauce until it thickens.
  15. If the sauce can sit for a day, don`t tie it too thick.
  16. Now season with salt, vinegar and a little sugar.
  17. Not too much sugar, because it should taste sour and not sweet and sour!
  18. Bambes:
  19. Grate the potatoes raw and grate the onions.
  20. Preferably with the potato grater. Add the eggs whole and a little salt and pepper. Salt should be felt when you taste it.
  21. To bind the flour in and stir.
  22. Do not leave the dough to stand for long or it will turn dark.
  23. Bake small bambes (pancakes) in a pan with oil in portions on both sides until golden.
  24. Now pour the sauce over the Bambes and serve immediately.
