Mash the bananas with a fork and place in a bowl along with the sugar, vanilla sugar, oil, flour and baking powder. Add enough soy milk to give the dough a sponge cake-like consistency (about 75 ml) and stir with a spoon. Finally stir in the sliced almonds.
Put the dough in a greased pan that may have been sprinkled with breadcrumbs (or simply line the pan with baking paper instead) and bake for approx. 45 minutes at 180 degrees top and bottom heat in the preheated oven. Please do a chopstick test to see whether the bread is ready.
Tastes very good on its own or with jam, plum jam, nut nougat cream or while still warm with salted butter.
