  1. Mash the banana with a fork. Add eggs and chia seeds and mix everything into a batter. Place in the refrigerator for 5 - 10 minutes. Meanwhile, cut the nectarine or other fruit into thin slices and set aside. Heat the fat in the pan and place about a tablespoon of the batter in the center. Fry until golden brown on both sides.
