Peel the banana and mash it with a fork. Drizzle the mashed banana with a little lemon juice and stir so that it doesn`t turn brown. Add the quark. Sweeten with a few squirts of agave syrup as desired. Add the amaranth. Add the milk. Mix everything together.
Toast the almond slivers in a pan without butter, taking care not to let them get too dark. Add the honey to the pan with the roasted almond slivers, stir briefly and immediately pour the almonds over the banana quark.
Now sprinkle a few more pistachios over the quark, if you also want some amaranth and the crispy banana quark is ready.
You can of course also use fresh strawberries in summer. The crispy banana quark is ideal for breakfast. It is wonderful to prepare in the evening; Put it in the fridge and then take it with you to the office.
