Peel the onion and cut into large cubes. Heat roughly 2-3 tablespoons of oil in a large skillet over medium-high heat. Fry the onion for 3-4 minutes until translucent.
Add the pork schnitzel strips to the skillet and sear for 2 minutes per side until browned.
Season the meat with salt, pepper, and curry powder, stirring well to coat.
Add the bell pepper strips and fry for 2-3 minutes, stirring occasionally.
Pour in coconut milk (roughly 250 ml or enough to partially cover the ingredients) and stir to deglaze the pan.
Reduce heat to medium, cover, and simmer for 5 minutes. The pork should reach an internal temperature of 63°C (145°F).
Peel the bananas, slice them, add to the skillet, and simmer uncovered for 1-2 minutes until heated through.
