Instructions

  1. Peel the bananas and mash them finely or puree them finely in a food processor. Mix the eggs, oatmeal, flour and baking soda with the banana puree.
  2. Heat a pan with a little oil, portion the dough with two spoons and bake on both sides over medium heat until golden brown.
  3. Drizzle some peanut butter and apple syrup over the finished pancakes and sprinkle with the puffed quinoa. Serve with fresh fruit if you like.
  4. The amount of ingredients makes about 6 medium-sized pancakes.
