- Peel the bananas and mash them finely or puree them finely in a food processor. Mix the eggs, oatmeal, flour and baking soda with the banana puree.
- Heat a pan with a little oil, portion the dough with two spoons and bake on both sides over medium heat until golden brown.
- Drizzle some peanut butter and apple syrup over the finished pancakes and sprinkle with the puffed quinoa. Serve with fresh fruit if you like.
